Thai Red Curry with Chicken

Original recipe makes 4 servings

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the raw chicken pieces; cook and stir for about 3 minutes. If you're using canned (cooked) chicken breast, put the chicken in after the vegetables are nearly as tender as you want them so the chicken doesn't overcook.
  3. Mix in the curry paste, zucchini, bell pepper, carrot and onion.
  4. Cook and stir for a few minutes.
  5. Dissolve the cornstarch in the coconut milk, then pour into the skillet.
  6. Bring to a boil, then simmer over medium heat until the vegetables are the right tenderness and the sauce has the thickness you like. It will thicken faster with the skillet top off. (If the cook's top is off, dinner might be served late.)
  7. Right before serving, stir in the cilantro.
